Banana Chocolate Chip Pancakes with Peanut Butter Syrup
March 3, 2012 in Recipes
I was inspired by the brown banana sitting on my counter.
I decided to add it to my pancake batter…and then to add chocolate chips…and then to incorporate peanut butter, too. And so was born a new family favorite:
Banana Chocolate Chip Pancakes with Peanut Butter Syrup.
(This recipe is an adaptation of Good Old Fashioned Pancakes from allrecipes.com.)
It was met with rave reviews by my toughest critic.

Here is what you need to make your own Banana Chocolate Chip Pancakes:
1 1/2 c. all-purpose flour
1 T. baking powder
1 t. salt
1 T. brown sugar
1 1/4 c. milk
1 egg
1 over-ripe banana
3 T. butter
chocolate chips
Here is what you need for the Peanut Butter Syrup:
1/4 c. butter
1 c. brown sugar
3 T. corn syrup
3 T. water
1/4 c. peanut butter
Instructions for the Banana Chocolate Chip Pancakes AND Peanut Butter Syrup are included below. Follow from top to bottom to have both the pancakes and syrup hot and ready at the same time.
Combine 1/4 c. butter, 1 c. brown sugar, 3 T. corn syrup, and 3 T. water in a small saucepan.
Cook over low heat, stirring occasionally, until butter has melted.
Heat a lightly greased frying pan or griddle to medium-high heat (let it get nice and hot while you mix up the batter).
Mix together 1 1/2 c. flour, 1 T. baking powder, 1 t. salt, and 1 T. brown sugar.
Make a well in the center and add the 1 1/4 c. milk, 1 egg. Mash up the banana and add it, too.
Mix until smooth.
Stir in 3 T. melted butter.
Remove syrup from heat and stir in 1/4 c. peanut butter.
Syrup will thicken slightly as it cools.
Scoop or pour batter onto hot pan.
Sprinkle chocolate chips on top of each pancake.
Flip when bubbles form around edges of pancake and lightly brown on each side.
Enjoy!
